Först tärnar du lök och vitlök, lägger åt sidan. Sen tärnar du morot, fänkål, rotselleri och purjolök (den gröna delen). Smält smör och fräs vitlök och lök tills det mjuknar, sen på med rotfrukterna. Fräs några minuter, sen slår du på en kvarting vitt vin och låter det ånga av. Slå på lagom mycket vatten (så det täcker grönsakerna och lite till). På med lite fiskfond och en tärning grönsaksbuljong. Låt det puttra tills morötterna mjuknar. Kör det med en stavmixer tills det får slät konsistens. Tillbaks på värmeen och lägg i fisken. Ca. tio minuter är rätt lagom, låt det puttra lite lagom och ta bort det från värmen. Smaka av och salta peppra om det behövs Servera i en djup tallrik med en klick creme fraiche, grovhackad persilja, nyskalade räkor och lite cayennepeppar. Ungefär så
